When the summer season rolls around, nothing is more refreshing and delicious than a tomato, basil and parmesan carpaccio. This simple but sophisticated salad recipe gives pride of place to natural and fresh ingredients, with a particular emphasis on Camargue salt L'Ail from Atelier du Sel Camargue, our champion for enhancing flavours.

Ingredients

Ingredients for 4 to 6 people:

- A dozen beautiful ripe tomatoes.
- A bunch of fresh basil
- 100 to 150 grams of Parmesan according to your taste.

For the dressing:

- Balsamic vinegar.
- Virgin olive oil.
- Camargue salt flavored Garlic - Garlic and Turmeric from Atelier du Sel Camargue.
- 5-berry pepper.

Instructions

  1. Start by cleaning your tomatoes and fresh herbs.
  2. Cut the latter into thin slices to obtain uniformity in the mouth.
  3. Arrange the strips on a plate, side by side and overlapping.
  4. In a bowl, using a spoon, mix the balsamic vinegar and the virgin olive oil. Then add a few turns of the mill of our aromatic Camargue salt flavored with Garlic and a pinch of 5-berry pepper.
  5. Season your tomatoes by spreading your marinade over the tomatoes to revive your taste buds.
  6. Before serving, sprinkle with fresh herbs and Parmesan shavings for the finishing touch. (The greediest will probably add a little pesto ;)
